Green Spot Single Pot Still Irish Whiskey is inspired by Mitchell & Son’s old-fashioned method of marking ageing barrels of whisky in their cellars. It is a no-age statement Irish Whiskey finished in ex-Bourbon and ex-Sherry casks. Green Spot and Yellow Spot whiskies are both available to buy at Fareham Wine Cellar.
History of Mitchell & Son and the Spot Whiskey Tradition
Mitchell & Son was established in 1805 at 10 Grafton Street, Dublin and began their life as a confectionery, wine, and fortified wine business. The company, founded by the Mitchell family, expanded into the Irish whiskey trade, which was growing fast in Dublin the 19th century. Their approach to whiskey ageing led to the creation of the iconic “Spot” whiskey range, a tradition that continues to this day. The family developed the “spot” system for tracking the ageing of their whiskey casks in their cellars at Grafton Street where they would mark the casks with different coloured paint spots to indicate the intended maturation period:
- Blue Spot: 8 years old
- Green Spot: 10 years old
- Yellow Spot: 12 years old
- Red Spot: 15 years old
Green Spot Whiskey
Today’s Green Spot Single Pot Still Irish Whiskey is a modern continuation of Mitchell & Son’s legacy. It is produced by Irish Distillers at the Midleton Distillery in County Cork. It is a no-age-statement (NAS) whiskey crafted from a blend of single pot still whiskies which are aged between 7 and 10 years.
Whiskey Production Process
- Mash Bill: Green Spot is made from a combination of malted and unmalted barley, typical of single pot still Irish whiskey. The use of unmalted barley helps contribute to the whiskey’s signature spicy and creamy character.
- Distillation: The whiskey is triple distilled in traditional copper pot stills at Midleton Distillery. This triple distillation is said to produce a smoother, lighter spirit compared to double-distilled whiskies (like many Scotch whiskies, for example).
- Ageing: Green Spot is matured in a combination of cask types:
- New Bourbon Barrels: These impart sweet, vanilla, and caramel notes.
- Refill Bourbon Barrels: These add subtler oak and spice flavours.
- Sherry Casks: A portion of the blend is aged in ex-sherry casks (likely Oloroso or similar), which contribute rich fruit, nut and spice notes.
- Blending: The whiskies are carefully blended to achieve Green Spot’s signature profile.
- Bottling: Green Spot is bottled at 40% ABV.
